
BREAKFAST VEGGIE HASH

1 lb ground turkey 1/2 green bell pepper 1/2 red bell pepper 1 medium tomato 1 zucchini 1/2 red onion 2 garlic cloves minced 1/2 tsp cumin 1/2 tsp smoked paprika 1/2 tsp garlic powder 1/2 tsp chili flakes 1/2 spoon oregano S&P olive oil Parsley & parm for garnish

DIRECTIONS
- In a bowl, combine ground turkey, cumin, smoked paprika, garlic powder, chili flakes and oregano. S&P generously. Mix well. Using hands or a scoop, form 5-6 meatballs. Set aside.
- Chop up the onion, tomato, red & green pepper, and zucchini.
- Over medium high, heat a splash of olive oil in a cast iron or a large pan. When oil starts to smoke, add onion and garlic. Saute, stirring often until translucent, about 1-2 min. Push the onion and garlic to the sides of the skillet. Place the ground turkey balls into the middle of the pan. Sear until browned, about 2 min on each side. Using a wooden spoon, break up the balls into smaller chunks.
- When turkey is no longer pink, add the chopped vegetables and S&P to taste. Mix well and saute for another 3-4 min, until peppers and zucchinis are tender. Remove from heat.
- Serve the hash with some freshly grated parmesan and chopped parsley. Enjoy!
